Coca-Cola Cake

Back in the days when we had a Coca-Cola machine on practically every corner, this was a VERY popular cake.  Still is, with some of us. 

Cake ingredients
2 Cups all-purpose flour, plus more for flouring the pan
1 Cup butter, plus more for buttering the pan
2 Cups sugar
1 tsp baking soda
1 Cup Coca-Cola
3 Tbsp unsweetened cocoa powder
½ Cup plus 2 Tbsp buttermilk
2 eggs

Prep directions
Preheat oven to 350° F (176°C).
Butter and flour two 9-inch cake pans.

Cake directions
In a large bowl, sift the flour, sugar and baking soda.
Melt the butter.
Add the melted butter, the Coca-Cola and the cocoa powder to the flour mixture.
Blend.
Add the buttermilk and the eggs.
Whisk until smooth.
Pour the batter evenly into the cake pans.
Bake 25-35 minutes.
Remove from the oven and allow to cool for about 10 minutes.
Finish cooling on a wire rack. 

Frosting ingredients
½ Cup butter
4 Cups confectioners' sugar
3 Tbsp cocoa
¼ Cup plus 2 Tbsp Coca-Cola
1 vanilla bean, halved and seeds scraped, or 1 tsp vanilla extract
1½ Cups mini marshmallows
1 Cup pecans, roughly chopped

Frosting directions
Melt the butter.
Pour it into a large bowl.
Add confectioner’s sugar, cocoa, Coca-Cola and vanilla bean seeds.
Whisk until smooth.
Let frosting cool about 10 minutes.
Frost the cake.
Finish with marshmallows and pecans.
